Green Juniper week opens with a bugle blast on the hill…
Chris enjoys harvesting the juniper. It is one of his happiest moments. You can see it on his face. The jab of the needles is… well… exfoliating. Quite quickly it passes to a family affair.
We use umbrellas to collect the juniper. This being an unusually sunny day, we use a parasol, of course.
Then back to the distillery to sort. The harvesting releases a fair amount of chaff into the mix – principally dead needles caught inside the branches. Chris has decreed that this needs to be expelled before we put the green through the vacuum still. We leave a small number of purple in each batch where they are changing from green to purple as we have found that the taste of these berries is very similar to the pure green.
